This recipe has been modified from one that I was sent from a lovely patient who found it on the ‘eat drink paleo’ website. So, as it goes with all great recipes, I added my own little twist and am sharing it with you. I hope that you will do the same with your family and friends!
The reasons I love this recipe so much are:
- They taste amazing!
- They take almost no time to cook
- Gluten free, dairy free and only contain natural sugars – you can make them lower carb too by switching the honey for xylitol
- Nut free – you can add these to the kids lunch boxes!
Note: I double the recipe because I know how quickly these get eaten.
Ingredients:
- 1 medium sweet potato – equivalent to 2-3 cups when grated
- 2 eggs
- ½ cup coconut oil (warmed to liquid if it happens to be solid)
- 1/3 cup honey
- 2 teaspoons vanilla extract
- ½ cup raw cacao powder – sifted
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 ½ tablespoons of coconut flour
Method:
- Preheat oven to 185°C. Make sure that the oven is hot before putting the brownies in
- Combine, sweet potato, eggs, oil, vanilla and honey in a large bowl and mix well.
- Add cacao, baking powder, baking soda and stir.
- Add coconut flour last – being careful not to add too much or else your brownies will dry out. Stir well.
- Pour into a lined tin. I use a 14’ by 10.5’ tin for a double batch.
- Cook in oven for 25-30 minutes. Allow to cool before removing from tin (if you can)
Raw chocolate ‘icing’
Ingredients:
- Cacao butter
- Coconut oil
- Raw cacao
- Honey or maple syrup (you can use xylitol instead if you are very carb conscious, but it will not dissolve and will stay crunchy – it tastes fine, but if you are after a smooth texture, then use honey or maple syrup)
Method
Combine all ingredients in a small pot on the stove. Stir regularly until cocoa butter and honey have melted and a even consistency has been achieved. Pour over your brownie and enjoy!
Brownie can be cut and stored in the freezer if you think that it won’t all get devoured in a couple of days.
